vanilla chia pudding

 I never thought I would like chia pudding. I have a hard time with the texture of chia seeds once they start to “gel” but I loved this dessert! We usually do a pot luck at my nutrition school for the last day of classes while people present presentations and someone brought vanilla chia pudding with mixed berries. Our entire class loved it and I thought it would be awesome to have around our house for snacking purposes.

This dessert (or snack) is really satisfying if you don’t eat dairy and are missing yogurt in your life. It’s creamy, not too sweet, and goes so well with berries. The chia seeds also add so many nutrients -  Fiber (10g/1 oz), protein (4.7g/1 oz), and healthy fats (9g/1 oz). 

Aside from being super healthy, it’s also really easy. Start with a can of full-fat coconut milk and pour the contents into a medium sized mixing bowl. Add 1/4 cup chia seeds, 1 tbsp maple syrup, 1 cup non-dairy milk,  1 tsp vanilla extract and a pinch of fine grain sea salt. Blend everything together with a hand mixer and you’re done! You can serve it right away or let it set-up in the refrigerator for an hour or so.

Dairy-free, naturally-sweetened thick and creamy pudding!

Ingredients
  1. 1 can full-fat coconut milk
  2. 1/4 cup chia seeds
  3. 1/2 cup non-dairy milk (I used vanilla unsweetened coconut milk)
  4. 1 tbsp real maple syrup
  5. 1 tsp vanilla extract
  6. pinch of fine grain sea salt
Instructions
  1. Add all ingredients to a medium-sized mixing bowl
  2. Using a hand mixer, combine until smooth and well-combined
  3. Serve immediately or let it thicken in the fridge before serving - both are delicious - serve with mixed berries or just plain
  4. Store covered in the refrigerator for as long as it lasts you!
