Paleo Lettuce Wrap Club Sandwiches

Miniature, cute little club sandwiches without the bread. So good and so satisfying I promise you won’t miss the sandwich bread. The crunch of the lettuce, the saltiness of the bacon and the tang of the pickles – YUM. 

Paleo Lettuce Wrap Club Sandwiches

We had these for dinner last night and I was pleasantly surprised that such simple ingredients could make something so delicious. We added dijon mustard to ours, but I am sure mayo would also be good since they are sort of reminiscent to a BLT. Enjoy:)

A bread-less, healthy way to enjoy a delicious club sandwich.

Ingredients
  1. 1 head romaine lettuce - leaves removed and cut in half width-wise to create the "lettuce bread"
  2. 2 chicken breasts
  3. 1/2 tsp fine grain sea salt
  4. 1/4 tsp fresh cracked black pepper
  5. 3 dill pickles - sliced into rings
  6. 2 avocados - sliced
  7. 6 slices bacon - cut in half
  8. 2 small tomatoes - cut into slices
  9. condiments of your choice - mayo and/or dijon mustard
Instructions
  1. Preheat your oven to 350F.
  2. Place the chicken breasts on a baking sheet and season with salt and pepper
  3. Bake for 20-30 minutes depending on how thick your chicken breasts are
  4. Place the bacon on a baking sheet and bake for 20 minutes while the chicken is cooking
  5. While your chicken is baking, cut and slice the lettuce, tomato, avocado, pickles and set aside
  6. Once the bacon is done cooking cut each slice in half and set aside
  7. Once the chicken is done baking, let it rest for a few minutes then slice as thinly as possible
  8. Layer all the ingredients onto one lettuce leaf, add condiments then top with another lettuce leaf and enjoy!
