paleo cauliflower chowder

I had never made a cauliflower soup before so didn’t know what to expect. This had so much flavor, tasted almost cheesy even without any cheese, and was even better the next day (even without the bacon). I highly recommend it for these last chilly days of winter before spring arrives. It’s pretty easy, especially if you have my favorite soup tool, an immersion blender, and all comes together in one pot which is the best.

Aside from being delicious, this chowder is also really healthy. 

  • Turmeric, coriander & cumin – anti-inflammatory spices that I love to use whenever I can 
  • Coconut  milk which is high in B vitamins (promote energy) and Vitamins C & E (antioxidants)
  • Onion and garlic – anti-inflammatory. 
  • Carrots – beta-carotene and Vitamin A which is where this chowder gets some of its orange “cheesy” color

Ingredients
  1. 1 head cauliflower - roughly chopped
  2. 2 garlic cloves - diced(or more, depending on your preference)
  3. 1 onion - roughly chopped
  4. 2 carrots - roughly chopped
  5. 2 celery stalks - roughly chopped
  6. 4 cups chicken or vegetable stock (I used low sodium)
  7. 1 cup coconut milk
  8. 1 1/4 tsp ground cumin
  9. 1 tsp ground turmeric
  10. 1/2 tsp ground coriander
  11. 1/4 tsp cayenne
  12. 4 bacon slices - cooked and crumbled
  13. 2 tbsp coconut oil
  14. Sea salt and pepper to taste
Instructions
  1. Melt coconut oil in a large pot over medium heat
  2. Add onion, carrots and celery and cook for 5 minutes, until tender
  3. Add garlic and cook for 1 more minute
  4. Stir in the cauliflower and cook, stirring occasionally, for about 5 minutes
  5. Add in stock, spices and coconut milk, and stir
  6. Bring to a boil then reduce heat and let simmer for about 15-20 minutes or until the vegetables are tender
  7. Using an immersion blender, or a regular blender, blend until there are just a few large pieces of vegetables left (don't blend completely into a puree)
  8. Season to taste and garnish with bacon crumbles
Notes
  1. If you don't want any extra coconut milk left, feel free to use the entire can. We did that and it worked great.
