meal plan & grocery list – week 5

It’s the weeekend! And it’s finally not 90% humidity here. Woohoo! This means I can enjoy a pool day or two this weekend without completely sweating to death. What do you guys have going on the next couple of days? Mitch is out of town, so it’s just me and miss June bug and lots of time spent on school (T-minus 30 days until my thesis is due…eek). But I think I’ll be finding time for errands and outdoor play time. Have a great weekend you guys! And enjoy this week’s meals. I’m trying to include some lighter recipes since the weather is warming up and everyone’s trying to get those healthy pool bods. Enjoy!

This flavorful, nutritious sweet and spicy salmon is one of our new favorite ways to eat seafood!

Broccoli is so nutritious, and so delicious when roasted with coconut oil, salt and garlic. It's one of my favorite and go-to side dishes.

One of my favorite plant-based Indian dishes, this chickpea masala is spicy, healthy, and high in protein, fiber and healthy fats.

Healthy, citrus-y stir fry with chicken and veggies all tossed in a fresh orange glaze and served over rice. You will love this healthy take on take-out!
