meal plan & grocery list – week 4

Happy Easter Weekend! What is everyone up to? I think it’ll be a low key weekend down in Texas since I have managed to procrastinate once again and need to spend a couple days catching up on homework assignments 😉 But we’re brunching on Sunday, so that’s always a good thing. It’s Holiday weekends like these that make me miss living near family (and really good friends). Living in Texas definitely has its perks, especially when a bunch of our friends were stuck in the massive Denver blizzard this past week, but I still wish we lived closer. 

This week’s meal plan features some older recipes (and a lotttt of bacon) but some of my favorites like the cashew alfredo and my new Paleo Quiche that’s perfect for an Easter brunch. Enjoy! 

sunday

You will never know you are eating a plant-based Alfredo made out of cashews! This is a filling, hearty meal made with spiralized sweet potatoes, a cashew cream sauce, peas, spinach and bacon. You will love it!

monday

The most delicious healthy quiche! The almond flour crust is gluten and grain free and the entire recipe is dairy free. It's an impressive dish to serve to guests and one of my favorite things to snack on throughout the week.

tuesday

Chili served over spaghetti squash "pasta" with grass-fed cheese and minced onions. This is a dish based off a delicious Cincinnati, Ohio tradition, Skyline Chili.

Eggs baked over a spicy, rich bacon marinara.

thursday

Butternut squash, apples and spices blended into the most flavorful warming soup!

friday/saturday

One of the best salads ever! The tang of the dressing goes perfectly with the delicata squash, roasted beets, goat cheese and salty bacon.
