maple honey chewy granola bars

043These bars! I am so excited about them. Since eliminating most processed foods from my diet (most of the time, anyways), I have found it super hard to find healthy snack foods that you can grab on the go. When they’re in season, apples are probably my favorite, but they’re not in season right now, so off I went to find something different. 

My inspiration for these bars came from one of my favorite blogs, The Detoxinista. The author created a no-bake Oats N Honey granola bar that looked amazing and really easy, but wasn’t grain free. I am not a big fan of consuming a lot of oats, so I decided to make my own “oat mixture” with sesame seeds, pumpkin seeds and hemp hearts. I added the seeds and hemp hearts to a food processor and pulsed until they formed a mixture that resembled oats. 

024The result was a chewy, seed-based granola bar that’s held together with real maple syrup, honey and homemade almond butter. So good! After I took these photos I cut my bars into cute 1 inch squares for easy snacking. Enjoy this healthy, non-processed, on-the-go snack:)

Honey Maple Chewy Granola Bars

A grain-free, refined sugar-free, chewy granola bar you can grab on-the-go!

Ingredients
  1. 1 c raw pumpkin seeds
  2. 3/4 c raw sunflower seeds
  3. 1/4 c hemp hearts
  4. 1/4 c honey
  5. 1/4 c maple syrup
  6. 1/2 c almond butter
  7. 1 tsp vanilla
  8. 1/4 tsp salt
Instructions
  1. Line a bread pan with parchment paper
  2. In the bowl of a food processor or high speed blender, add the pumpkin seeds, sesame seeds and hemp hearts
  3. Pulse until a course mixture forms - don't over-pulse (view my picture in the post) and set-aside in a large mixing bowl
  4. In a small saucepan, bring the honey and maple syrup to a boil and let boil for 1 minute
  5. Remove from the heat and add the almond butter, salt and vanilla and stir to combine
  6. Add the almond butter mixture to the seed mixture and stir to combine
  7. Add the granola bar mix to the lined bread pan and press down evenly
  8. Place in the refrigerator for at least 2 hours to allow the bars to cool and harden
  9. Remove the parchment/bars from the pan and cut into squares or bars
  10. Store in the refrigerator
