maple dijon baked chicken

The BEST chicken baked in a zesty dijon maple sauce and topped with fresh rosemary.

This chicken might be my new go-to dinner recipe when I need something quick, easy and healthy. I don’t always have rosemary on hand, but maple syrup and dijon are common in my kitchen, making this a really easy dinner to throw together last minute.  Not only is it easy but it’s SO flavorful, and the chicken comes out perfect every single time.

All you do is whisk together the sauce ingredients, pour it over your chicken breasts and bake for 25 minutes in the oven. Once your chicken is ready, remove the chicken to a plate, whisk the tapioca starch and rosemary with the sauce and pour it onto the plated chicken. Easy peasy. I’ve made this a couple of times in the past week and we’ve loved it each night. It really is the perfect meal to throw together if you’ve been out all day or don’t have a lot of energy to make a big dinner.

We served ours with a big salad, but roasted veggies would be great too and the dijon sauce would be so good drizzled on top. Enjoy this healthy dish, perfect for a busy weekend or weeknight! 

Maple Dijon Baked Chicken

The quickest, most flavorful chicken ever! This chicken is baked in a healthy maple dijon sauce then garnished with fresh rosemary for a dish the entire family will love, in just about 30 minutes.

Ingredients
  1. 1 1/2 - 2 lbs chicken breasts - I used 6
  2. Sauce Ingredients
  3. 2 tbsp real maple syrup (raw honey also works great)
  4. 1/2 c dijon mustard
  5. 1 1/2 tbsp rice wine vinegar
  6. 2 garlic cloves - minced - or 1 tsp garlic powder
  7. 1/2 tsp salt
  8. 1/4 tsp pepper
  9. 1 tbsp tapioca starch - or arrowroot powder
  10. Garnish
  11. 1 sprig fresh rosemary - stems removed and roughly chopped
Instructions
  1. Preheat oven to 450 F.
  2. Grease a medium-sized casserole dish, or 8x8 baking pan with coconut oil
  3. Combine all of the sauce ingredients (except the tapioca starch!) in a small bowl and set aside
  4. Place the chicken breasts in the baking dish and top with the mustard sauce, making sure to coat all of the chicken breasts
  5. Bake the chicken for 25 minutes
  6. Remove the chicken from the baking dish and set onto a serving platter
  7. Immediately add the tapioca starch and the rosemary to the baking dish with the remaining sauce and whisk to combine until a slightly thick sauce forms and pour onto the chicken
  8. Enjoy!

    I do not eat meat or chicken but Matt said this was the best chicken I have ever made. I tried the seasoning and it was delicious! Thanks for an easy chicken recipe that I can make for Matt when we are in a rush and need a quick dinner. 🙂

    Got lazy and bought corn starch instead of the tapioca starch. Also misread rice wine and got red wine vinegar. I’m trying!! Still yummy. Thanks for the great recipe. Super easy.
