homemade paleo chai tea latte

017Chai lattes are one of my favorite drinks. Spiced black tea blended with steamed milk makes for a creamy, sweet and spicy latte. I used to buy them pretty often at Starbucks until I figured out just how much sugar they have. No wonder I loved them so much and no wonder I felt like I needed 3 naps after drinking one. 1 grande (medium) chai tea latte from Starbucks with skim milk has 43g of sugar. 1 regular coke has 44g of sugar. That’s crazy to me since the majority of people wouldn’t think they’re getting that much sugar from a tea latte. 

nutritionMy homemade version contains sugar, but I used local honey and not very much. In each serving there is 1 tablespoon honey and you could either omit this or lessen the amount depending on how sweet you like your lattes. 

Start by brewing your chai tea. 1 tea bag for every 8 oz water. I made an iced version and a hot version, so I made 16 oz of tea. 

003While your tea steeps, heat & whisk 1 can of full fat coconut milk and the honey in a small sauce pan. Once the milk and honey are simmering, remove from the heat and froth your milk using an immersion blender. You could also pour the milk and honey into a blender and blend for about 20 seconds if you don’t own an immersion blender. Mine is from Amazon and I love it.

009Now, pour 6 oz tea into a smaller mason jar or mug (or just fill half way with tea) & add your frothed milk.

011Add your ground cinnamon and nutmeg and enjoy! I didn’t have any ground cinnamon so I used  a zest grater to create my own with a cinnamon stick. Worked just fine! 

012Since the weather is warming up in Denver, I thought I would also show you the iced version. Make sure your tea and coconut milk mixture are room temperature or refrigerated before pouring it over ice. This version is equally as delicious, I just tend to drink them much faster:)

Ingredients
  1. 2 Organic Chai Tea bags
  2. 16 oz boiling water
  3. 1 14oz can full fat organic coconut milk
  4. 3 tbsp local honey
  5. Pinch of cinnamon and nutmeg
  6. 1 cup ice if making an iced latte
Instructions
  1. Boil 16 oz boiling water
  2. Pour over 2 Chai Tea bags
  3. While the tea steeps, heat the coconut milk and honey over low heat until the mixture comes to a simmer
  4. Remove the coconut milk from the heat
  5. Using an immersion blender or regular blender, blend the milk and honey until frothy
  6. Pour 6 oz of the tea (OR just fill half your cup or mug with tea) into a mug or glass
  7. Pour the coconut milk and honey over the tea
  8. Garnish with cinnamon and nutmeg
  9. Save any remaining tea and milk for a latte the next day!

    You do honey on Paleo? I just started & I’m seeing no sweeteners except Stevia from the recipes I’m reading.

      Sorry for the delay Kathryn – took a bit of a blog hiatus! But yes, I do eat honey while following a paleo diet. This is not the same for all, but I consider it a whole, unprocessed food and a good choice as a sweetener even on a paleo diet!
