dill & lemon salmon baked in parchment

005This was such a fun dish to make. Who doesn’t love dinner wrapped up in it’s own little parchment package?! This was an experiment for sure so it was fun to see how well it turned out. It was also super quick to throw together, flavorful and packed with nutrients. 

I had baby broccolini in the fridge so decided to use that as our veggie, but this is very versatile and you could use anything you have on hand. Zucchini, onion, and/or bell peppers would all be great. 

Start with parchment or tin foil. I prefer to cook and bake with parchment, but foil will definitely do the trick. Tear off a large piece – around 16 inches long – and fold in half. Place your ingredients onto the left-hand side of the crease starting with the veggies – butter – lemon slices – salt & pepper – salmon – dill – sprinkle with lemon pepper or more salt & pepper.

007Fold the other side of the parchment over the fish and veggies and start to fold and crease the sides inward toward the fish. There is no right or wrong way to do this, just make sure that all sides are somewhat closed and create a packet that will steam your fish and veggies. 

012Put your salmon packets onto a baking sheet and bake at 350F. for 20 minutes. When ready to serve, unfold the packets and serve either on a plate or straight from the parchment! Enjoy:)

Ingredients
  1. 2 wild-caught salmon filets
  2. 1/2 lemon - sliced
  3. 1 bunch baby broccolini
  4. 2 tbsp grass-fed butter
  5. 2 tbsp fresh dill - chopped
  6. salt and pepper to taste - used on top of veggies and on top of salmon
Instructions
  1. Preheat oven to 350F.
  2. Tear 2 16inch pieces of parchment and fold in half
  3. On the left-hand side of the crease, place 1/2 of the vegetables, 1 tbsp of butter, 2 lemon slices and salt a pepper
  4. Add the salmon filet on top of the vegetables
  5. Sprinkle 1 tbsp of dill on top of the salmon
  6. Season with lemon pepper or salt and pepper
  7. Fold the right side of the parchment on top of the salmon and vegetables
  8. Fold and crease all 3 sides of the parchment until a packet forms around the salmon
  9. Repeat for the second filet of salmon
  10. Place both packets onto a baking sheet and bake in the oven for 20 minutes
  11. When ready to serve, unfold the packets and serve on a plate or directly from the parchment
