antioxidant morning smoothie

March 30, 2015 by katiebenson Leave a Comment

049Happy Monday all! Hope everyone had a fun weekend. We went to DC for a weekend of visiting good friends, seeing monuments & museums, and feeling like we were House of Cards characters. In addition to all of that, I also had many mimosas, ate a lot of Easter candy and partook in some 2am chili cheese fries. Needless to say, I was pretty happy to get back to my go-to morning smoothie today!

DCI have this smoothie almost every day of the week for breakfast and it really never gets old for me. I’m not going to eat a salad for breakfast so this is the perfect way to get 3 handfuls of leafy greens into my life before noon. It also has almond butter, strawberries, blackberries and blueberries, chia seeds and coconut milk. So good and such a healthy, light way to start your day. If you’re looking for a way to get more greens into your diet without eating salads for every meal, this is the perfect way!

Ingredients
  1. 2 hand fulls greens - spinach, mixed greens, romaine, etc
  2. 1.5 c unsweetened coconut milk
  3. 3 tbsp almond butter
  4. 2 tbsp chia seeds
  5. 1/4 c mixed frozen berries
Instructions
  1. Add all ingredients to a small mason jar or blender and blend
  2. Enjoy!
Notes
  1. All ingredients can be substituted for what you have on hand
  2. Any green leafy veggie would work
  3. Any type of frozen fruit
  4. Any type of nut butter
  5. Flax seed instead of chia seeds, or no seeds at all
  6. Whatever kind of milk you have on hand, but coconut keeps it dairy free and cuts back on almond intake
