almond butter chocolate chip cookie dough bites

018Raw cookie dough?! My favorite. And it’s egg-less so it’s perfectly safe, acceptable and delicious to eat raw. Even better, these have very little sugar (I used coconut sugar instead of white sugar) and are gluten free since I used coconut flour instead of white or wheat flour. 

Why coconut sugar?

cocoIf I am not using maple syrup or honey, I use coconut sugar almost exclusively in baked goods. It’s definitely still sugar and needs to be used in moderation, but it isn’t refined and doesn’t go through nearly as much processing as cane sugar or brown sugar(cane sugar with molasses added). It is also 70-79% sucrose and only 3%-9% fructose and glucose. This is great news because we want to keep fructose consumption to a minimum. Cane sugar (which is normally what you consume when baking with white or brown sugar) is 50% fructose. Without getting into too much detail, our body is unable to use fructose for energy and so the liver automatically stores it as fat in our fat cells. Fructose makes us fatter so we want to avoid it. Coconut sugar it is:) With that said, the ever popular “healthy & natural” agave nectar is 85% fructose. Not so healthy! 

001These little cookie dough balls are really easy and such a good treat to keep in your fridge or freezer. Minus the chocolate chips, combine all ingredients in a medium sized bowl and mix with a hand mixer. Stir the chocolate chips into the batter by hand then roll the dough into miniature balls for snacking. Enjoy!

Ingredients
  1. 1/2 c natural almond butter or peanut butter
  2. 1/4 c plus 2 tbsp coconut flour
  3. 3 tbsp coconut oil - melted
  4. 1/4 c coconut sugar
  5. 1 tsp vanilla extract
  6. 1 tbsp almond milk or coconut milk*
  7. 1/2 c dark mini chocolate chips
  8. 1/2 tsp sea salt - I used course
Instructions
  1. Combine all ingredients into a medium sized bowl
  2. Using a hand mixer, combine all ingredients
  3. Add chocolate chips and stir to combine
  4. Roll into 1/2-1 inch balls and store in an airtight container in the fridge or freezer
Notes
  1. Any type of milk can be used but using coconut or almond will keep these vegan and dairy free
