raw chocolate chip cookie dough bites

cookie balls 1Raw cookie dough = my favorite thing ever. Now I can eat it without worrying about salmonella or getting chubby since these little bites are made with cashews, oats and maple syrup. No egg, no refined sugar, no flour and one of my favorite things ever. They really do taste like cookie dough without any guilt at all. You could even omit the chocolate chips and go for almond butter and you have just created almond butter cookie dough bites. I’ll have to try that and let you know how it goes. Enjoy these healthy bites! 

Raw Chocolate Chip Cookie Dough Bites

Ingredients
  1. 1 cup raw cashews
  2. 1/2 cup gluten-free oats
  3. 1/2 tsp salt
  4. 1 tbsp vanilla extract
  5. 3 tbsp maple syrup
  6. 1/2 c mini chocolate chips (I used large chips and it didn't work as well)
Instructions
  1. Line a plate or container with parchment paper and set aside
  2. Combine cashews, oats and salt in a food processor and high speed blender (I used a mini food processor and it worked great)
  3. Pulse together until a fine, uniform meal forms
  4. Add the maple syrup and vanilla to the cashew-oat mixture
  5. Pulse again until the mixture comes together in a ball of raw dough
  6. Remove the dough and place it in a small bowl and gently fold in the chocolate chips
  7. Using a cookie baller, or spoons, portion the dough into twelve even balls - mine are uneven 🙂
  8. Place completed bites onto the parchment-lined container or plate
  9. Enjoy right away or store in the refrigerator or freezer for later
