paleo chocolate chip cookies

Healthy cookies that I promise are SO good. I love to eat healthy, but I also love cookies, so I need recipes like this in my life. I have made them on Sundays for the past 3 weeks and like to freeze whatever I don’t eat. 

They’re dairy, grain and egg free and use only a few tablespoons of honey or maple syrup as a sweetener. So satisfying when you need something sweet!

Paleo Chocolate Chip Cookies

Ingredients
  1. 2 cups almond flour (or meal)
  2. 1/4 cup coconut oil (melted)
  3. 3 tbsp pure maple syrup (I ran out of maple and used honey and this worked great)
  4. 1/4 tsp sea salt
  5. 1/2 tsp baking soda
  6. 1-2 tsp vanilla extract
  7. 3/4 cup chocolate chips (I used semi-sweet, but dark would work great)
Instructions
  1. Preheat oven to 350F.
  2. In a bowl, whisk together almond meal, salt and baking soda
  3. Add coconut oil, maple syrup and vanilla and mix well
  4. Fold in the chocolate chips
  5. Drop better by rounded teaspoons onto a baking sheet lined with a silpat or parchment paper
  6. Bake for 7 minutes until edges just begin to turn golden (don't over-bake or they will be dry)
  7. Let cool and store in an airtight container
  8. Freeze leftovers for quick sweet fixes
Notes
  1. For a nut free version, I would assume coconut flour would work great, but I haven't tried it.
