fall cobb salad & homemade honey mustard dressing

3The taste of FALL! My absolute favorite season is just about here and I couldn’t be happier. Even though I live in the permanent 90 degree sauna that is Houston, TX, I still have this urge to make all things fall. Pumpkin everything, honey crisp apples, chili and beer, football…these are a few of my favorite things. When I think of fall, I usually think of Graeter’s Cinnamon Ice Cream. This stuff only comes around once a year and is one of my favorite things. If you live in Ohio, go buy a scoop for me:)

014This salad definitely has the fall flavors that I love. I sauteed sweet potatoes in butter and cinnamon, chopped up a honey crisp apple and added maple bacon to create a delicious, fall-like cobb salad.

032The bacon and hard boiled eggs provide enough protein to keep you full, but not weigh you down. If you wanted to add another protein, grilled chicken would be an awesome choice and would go great with the honey mustard dressing. To make the dressing, simply combine all of the ingredients into a jar or container, shake or whisk, and your homemade honey mustard is ready in just a couple of minutes.

045This salad is packed with super foods and full of nutrients for you and your family. 

The Cinnamon spiced Sweet Potatoes will provide you with fiber and Vitamin A. The cinnamon will help balance your blood sugar.

The Honeycrisp Apple contains fiber and Vitamin C for immune support. 

Add Eggs to your salad! The large amount of nutrients found in just one egg is impressive. Choline for inflammation, selenium which is essential for male reproduction, biotin for hair, skin and nail support, protein, omega 3’s for brain health and B-vitamins that help make us feel energized. 

The Avocado is full of healthy fats that will help your body absorb the Vitamin A found in the sweet potato. It will also provide you with energizing B Vitamins, fiber and Vitamin K.

Fall Cobb Salad & Homemade Honey Mustard Dressing

A healthy chopped salad with cinnamon-spiced sweet potatoes, honeycrisp apples and crunchy bacon

Ingredients
  1. 4 large handfuls of lettuce or mixed greens (about 8 cups)
  2. 1 avocado - sliced
  3. 1 large honeycrisp apple - diced
  4. 4 hard boiled eggs - sliced
  5. 8 slices bacon - chopped
  6. 1 large sweet potato - diced
  7. 1 tsp ground cinnamon
  8. 1 tbsp butter
  9. pinch of salt
  10. For the Honey Mustard
  11. 1/2 c dijon mustard
  12. 1/2 c olive oil
  13. 2 tbsp water
  14. 3 tbsp honey
  15. 1/4 tsp fresh ground pepper
  16. 1/4 tsp salt
Instructions
  1. Preheat your oven to 350 degrees
  2. Place your bacon onto a baking sheet and bake until golden brown and crispy
  3. While your bacon is cooking, dice your sweet potato and preheat a skillet on medium heat
  4. Add the butter to the pan and let melt, then add your sweet potatoes with the pinch of salt and cinnamon
  5. Let cook for about 10-15 minutes or until soft and set aside
  6. Add your lettuce to a large salad bowl
  7. While the sweet potatoes and bacon cooks, chop the apple, eggs and avocado and add to the top of the lettuce
  8. Chop the bacon once it is out of the oven and add to the lettuce along with the sweet potatoes
  9. To make the dressing, add all ingredients into a bowl or a mason jar and whisk or shake to combine
  10. Toss the salad with the dressing and enjoy!
